Here is my meal plan for this week! The theme is old favorites :) Hope you enjoy.
Sunday: Taco Soup
* This is another "old stand-by" for us. I made it all. the. time in college. I love that you can dump a bunch of stuff in the crockpot and let it go! Here is the recipe I use:
What you need:
1lb ground beef or turkey
1 lg onion, chopped
1 pkg taco seasoning
1 pkg ranch
1 can pinto beans
1 can chili beans
1 can corn
1 can stewed tomatoes
1 can rotel
Directions:
~Brown Meat and Drain
~Mix Ranch and Taco seasonings in meat
~ Add all other ingredients without draining
~ Cook on low in crockpot (I usually let it cook all day...really meld the flavors, but honestly once it's heated through you could eat it! :))
Monday: Bubble Pizza
* I know what you are thinking, "Um, wasn't this on last week's menu?" and the answer is, "yes." But like all families, life happens. We decided to have a spontaneous family date night to our town's street fair and enjoy food trucks one night, so I saved my bubble pizza ingredients for this week!
Tuesday: Zucchini and Beef Casserole
* We love this recipe over rice! Super easy to make!
Wednesday: Pulled Pork Sandwiches
* Another beloved crockpot recipe (see a pattern??). I put a pork roast in the crockpot, slice a whole onion, and pour in 1 Cup of Root Beer. Let it cook on low about 5-6 hours. Pull out Roast, shred, and cover in your favorite barbecue sauce! Easy Peasy!
Thursday: Lasagna (With uncooked noodles)
* This is a newer recipe for us, but has become a favorite. The trick is really to make it the night before and let it sit in the fridge. That helps the noodles become soft! Plus it's nice to have it ready to just pop in the oven!
Friday: Taco Bake
* Another favorite of ours and probably one of the easiest weeknight meals! Here is the recipe:
What you need:
1 lb ground beef
1 pkg taco seasoning
1 can chili w/beans (15.5 oz)
1 pkg shredded colby & jack cheese
2 pkg corn muffin mix (8.5 oz each)
1 can mexicorn
Chopped tomatoes, sliced olives, and sour cream for garnish if desired
Directions:
~ Brown Meat and drain
~ add seasoning, chili, cheese, and mexicorn
~ put beef mixture in bottom of casserole dish (9x13)
~Mix cornbread according to directions on the box, pour cornbread batter on top of beef mixture
~Bake 30 minutes at 350 degrees
